At idle with the AC running, both electric fans should be running. Where does your temp needle stay most of the time. Should stay rock solid in the middle. Give us some more information about how and when it occurs.

check your thermostat, either installed improperly or sticking closed.,
cooling system leaks, from either hose connections or from the cylinder head due to overheating.
fan, might be from faulty fan clutch
water pump, belts and hoses, check belt tension and condition. A loose belt that slips may prevent the water pump from circulating coolant fast enough and/or the fan from turning fast for proper cooling.
and audi 4000 radiator, older copper and aluminum radiators tend to get clogged, restricting the flow of coolant.

It's under the timing belt on the passenger side, by the water pump. It takes about 4-6hrs to get to it.
