Jus get the back seat passengers to sit backwards?
Ok on a more serious note, i havnt done this, there is a small 'click' tab nex to the rite hole thingy, push and pull upwards. if that dont work u mite need to spray a bit of lub down the hole to loosen it up u bit?
Good luck and let use know how it goes

RE: Headrest help??
I just had this same problem and after some mucking about, got it out. The problem is that the post on the locking side (the side where you push in to release the headrest) is slightly different than the post on the non-locking side. If you look at the post notches, the last notch on the locking side has a step whereas on the locking side it's a ramp. There is a spring-loaded bar in the collar that fits into these notches.
On the locking side, pushing in on the collar releases this bar which would normally get stuck on the step. On the non-locking side, there is no step in the notch on the post and the bar can slide up the ramp part of the notch. When you put the headrest in backwards, the step is on the non-locking side and the bar there has no way to be released externally and the headrest gets stuck.
To remove it, you have to pry off the plastic part of the collar the posts slide into. Once you do this, you can see the end of the metal release bar. Pry the end of the bar away from the post and it pulls off the step in the notch post and you can then remove the headrest.
What a stupid, stupid, design. Lazy engineering annoys me. But at least you can get it off.
This works for my 1999 A4 avant at least.

RE: Headrest help??
Umm idk if u can get to the posts this way. but there are release points where you can pop the plastic back of the seat off, then you might be able to get at and see everything, i only know this cause my seat back fell off and i had to put it back on haah.
