If you left your light switch in the "Auto" position prior to parking the car for those several days at low temps the slight hard time cranking could be caused by the drain the light sensor places on the battery even when the car is switched off. I think there is a warning about that in the owners manual someplace.
The flickering light and "dipped beam" is often a sign of the blubs are nearing the end of their life. I've been through this twice (137,000 miles). If the flicker and warning only happen very infequently, no problem. But if it starts happening on a weekly basis, buy some new bulbs.
As for the fan speed issue, are you in the automatic mode when this happens?
