Default Limp Mode, what to do?

Hello, I have a 2002 A4 1.8 T Quattro, and over the past month, I've noticed that when the weather is very muggy/snowy, and I'm using my car a lot, it often goes into Limp Mode (I think). The CEL, ESP, and traction lights come on, and it's as if the Turbo shuts off. It takes an extremely long time to accelerate, and I can't seem to go past a certain RPM and speed (roughly 100 Km/h). The funny thing is that after a day or so, the problem is gone and the lights shut off and my turbo is working great again! I tried reading about online but I'd love some help with this problem. I scanned my car and here is what i got. Please let me know your thoughts!

Default Accelerator position sensor

Looks like your gonna need a new accelerator pedal.
