Ok I'm thinking it's a wheel bearing but let's see. This is my 96 Quattro. I know usually hard left you should hear it in right rear and hard right left rear. But when I go hard right I hear it in the right rear. And it isn't constant sometimes you will hear it sometimes you won't

The right/left rule is just a guide, it does not always work that way. Lots of times if you jack up a corner and turn the wheel with your hand, you can hear a bad bearing grind a little bit. I've heard of other guys who say to put your hand on the spring while you turn the wheel and you can feel it.

I'm surprised you are doing a wheel bearing when it isn't loud enough for you to be sure which one it is. this isn't an easy job on front - rear, easier. I've done both by removing wheel bearing housings and taking them to a shop for pressing. Maybe you have a Hub Shark or something to do it in place on the car.

How much is 2 wheels bearings from the mechanic going to cost you?
