Yes you could, you could also change the CR during that time. Maybe do some cams and even get the car custom tuned, well as long as its not a 12v lol

Yes, the LS series engines are heavier than the VAG 1.8. Obviously. And yes, it will make an already severely nose-heavy car even worse, but it's in the same boat with the VAG 4.2 v8 and I bet the LS series will be more reliable, and they are definitely easier to work on. Of course, they'd also be much more work to swap into an Audi. And I'd be surprised if it could work with Quattro, which would be a huge loss.
As for the power vs BT 1.8, perhaps, but the LS series will kill you in low-end power and if you're talking custom turbo then you can do that to the Chevy as well and get to areas untouchable by the 1.8. There's no replacement for displacement.
That having been said, I wouldn't recommend an LS swap. I do, however, recommend said swap for a Miata. That or the new LLT 3.6L direct injected v6. AWESOME engine. http://en.wikipedia.org/wiki/GM_High_Feature_engine
