You should be able to do just about anything the S4 2.7 guys do and there are some of them that have built the bottom ends to 3.0 liter, but that might just be by using a larger bore.
You might want to do some reading up on the S4 2.7 forums to see what can be done.
If you dont plan on adding a turbo or SC, you could always bore it out and put in higher compression pistons to run it on a higher octane fuel. Could even do that and have it tuned for E85(105 octane) but will need to run slightly larger injectors.
You could always look at swapping in a VR6 if you really want to go 3.2 liters. Then at some point you could always throw a single turbo in.

The easiest thing to do will be to just swap in some larger pistons and increase the compression a little more to 11:1. 1mm oversize pistons will take you from 2771cc to 2839cc and that would be another .4:1 c/r. But that may only gain you another 20hp. The best thing to do would try to drop in a 4.2 V8 and be happy
