Been getting the same issue on my B7 this week. My girlfriend used it for a bit yesterday and it was fine, i then used it myself.. all good.

This morning when I'm heading to work, catch up to traffic and when i slowed down i could smell the terrible heated brake. Got to work (slow) and when parked, I could tell it was only passanger side rear wheel.. the smell was definitely from there (only, none of the other wheel areas smelled). Seems weird that it would just happen like that overnight.

Flush the brake fluid first. Water is a byproduct of compression/heat as the brake fluid nears boiling temps, and brake fluid attracts the water away from the other components. It's possible that after tens of thousands of miles without a flush that the water content is high enough to cause a caliper to lock up in freezing temps. Definitely try that first because brake calipers are hardly ever an issue with our cars.

Not to steal the thread here, but I was wondering, how could you tell visually or somehow, that the calipers need replacing? I'm about to do a brake and brake lines job, and want to make sure I replace the calipers if they're worn or broken. Will it always be ostensible and/or visible?

As long as the piston operates smoothly and you don't have pads wearing more or less compared to the other side of the car, then it should be ok. Like I said, calipers are very rarely an issue with our cars.
