I have a 1.8, but I'd suggest taking off the belly pan for a little while. Clean up the whole engine bay and take a look at it everyday with a flashlight. I found a couple myself. First, I found a leak from where the oil drains because the previous owner put the wrong drain plug in and it didn't even have a washer. After that stopped leaking, I found another spot where there's a leak coming from the front of where the oil pan connects. That one's a really slow leak at least.

Default oil leak

I crawled under the car today and removed the plastic covers on the engine and the oil is definently coming from the valve covers. It doesn't look like a bad job to do but, would appreciate any insight. 2001 2.8 Thanks

Valve cover gaskets are straightforward.

Straightforward and covered in tremendous detail often on here . You'll find everything you could want to know about it with ease.

X10...I noticed a small spot on the ground about the size of a fifty cent piece. Gasket is leaking but I'm having issues with the pcv hoses gumming up and I'm leaning towards the suction pump.

Yes, definitely check that out. Look into a catch can for the oil. There's also a revised suction pump which might help some (but don't expect miracles) for like $20ish. A clogged suction pump/PCV setup can blow other oil seals.
