What is the proper way to bleed the air from the coolant system? I've heard it all, from using the small hole in the heater core (fill coolant while that hole is exposed. Fill until coolant comes out of the hole) to fill the radiator first, to the system off and start the car with the cap off.

I most recently did the first mentioned method. The coolant reservoir over filled before the heater core. I read a couple ideas that you fill the coolant tank to full, seal it up, get the car moderately warm then shut it off. Then either unscrew the cap just a few threads so the air and some coolant spews out, or wiggle the heater hose off just enough, then shove it back on.

I'm so confused. I've even parked it on a steep hill running for awhile and no dice.

lol i just run my car and undo the cap once a day and let it bleed itself

And the coolant replicates the Vesuvius eruption?

I've always used the method of running the car up to 3/4 temp and burping the tank cap. No issues for me yet.
