WHOA!! Thanks a lot guys for all of your Fantastic Replies! Mike your response made sense so all of you who thought it was the thermostat were correct, I replaced the thermostat today and now the temp sits bang on 90 Degrees C. Oil temp seems to take a bit longer to warm up but has been sitting around 1/4 of the gauge since the thermostat replacement, as described by Cragman.
This experience makes you APPRECIATE the benefits of a working thermostat, which so many people take for granted :P

If the thermostat stuck closed, you'd likely overheat since the heat-soaked coolant couldn't get out to the radiator to be cooled. I'd swap out the thermostat and also do the coolant temp sensor just because it's a known issue item and causes all sorts of headaches when it craps out. It's cheap and easy - do it too.
