I believe that's due to it's low wet boiling point. Super Blue and DOT5.1 bothe require frequent bleeding or flushing to keep the moisture out and the boiling temp up.

I have a really stupid question for all;
how do I know when I have to add brake liquid fluid? I tried looking under the hood and it's impossible to see its current level.

The real answer: you should never have to top it up. Technically if it's low, it's an indication your brake pads are worn and need replacement or you have a leak. You should only have to open the reservoir to bleed or flush the brakes.
If the fluid is very low, it's going somewhere. It's either in the calipers (worn pads) or is leaking from a seal somewhere (master cylinder, caliper pistons, or obvious line leaks). Brake fluid does not evaporate or burn off if the braking system is functioning properly.
