if you want to race, and try to get off on being all macho hacho and beating people down, build your damn motor and slap a gt30 or gt35 then go toot your horn around town...

Stock v Stock, The 350Z will eat you for lunch for many reasons.
1) it just plain has more torque. nearly 80 lb-ft more
2) it can put ALL of that torque on the rear wheels if you're just talking speed
3) by default its drive wheels are bigger than yours
4) When you both reach max output, it's putting out nearly 80 more hp
5) it doesn't weigh any more than your car
So in conclusion: You shouldn't be racing anyone, anywhere, especially if you haven't paid off your car. And doubly-especially not 350Zs.
You can race a cobalt SS, though. Because even if you lose, at least your car doesn't look like a damned cavalier.
[edit: I was comparing the 2008 coupe to the 2005 350z. the 2008 has 268lb-ft of torque and 305 horsepower. So you're still spanked, and especially if there's room for the 350z to use the horsepower]
