Sounds like fun. I tried to get my dad to restore a car with me, but no go. I had a 1984 MB 300D turbodiesel lined up that I was gonna get pretty cheap, but he's not into cars as much as I am.

yes and automatic, for the most part, = gay.
besides, you mentioned you like good fuel mileage. mileage is generally better with a manual transmission, although I'm actually not sure if that holds true with CVTs.

I have a CVT and my Mom has a quattro. I bought a front track because I live in Florida and didn't think I wanted to pay for quattro either. The CVT is really cool, but the Qurttro car drives better. The front track car has a still has a little of the front wheel drive kinda feel and even when the street is a little wet the tires slip occasionally. You have to get used it, you just step on the gas and let it do its thing. If the tires slip, just leave you foot where it is and let the tire slip. If you take your foot off the gas it will start to do the rubber band thing people talk about. The CVT does get better gas mileage. My first CVT went 7000 miles before needing replacement. Now at 15,000 the second is still going strong. The Quattro drives better in a straight line and if you want to turn quickly in the rain you don't have to think about it. I would pick Quattro.

alright, correct me if I'm wrong but CVT is Continuous Viscous Transmission, right. My mom has a CVT on her freestyle and I don't like it, they car is ridiculously smooth but it only revs to so high and it doesn't ever shift when you want it to.

I just picked up an 08 A4 2.0 CVT about a week and half ago, after having a 3.2 Quattro for 2 years. I do notice some slippage on the front wheels when accelerating, but it is not too bad. I am getting better gas mileage, but I attribute that from going from a V6 to the 4. Overall the car handles just about what I came to expect out of the previous car as far as turning and I think the ride is actually a little smoother. I do notice going over speed bumps in my office complex is a lot smoother now, the back of the Quattro used to jump up and was quite annoying, the bump on the CVT is a lot less pronounced.

I'd like to point out that CVT has nothing to do with quattro.
quattro = Audi's proprietary all-wheel-drive system
CVT = Continuously Variable Transmission = automatic transmission which does not have precisely set gear ratios
Comparing the two is like asking "Should I get leather seats or a turbocharger?"
