***UPDATE***
spoke to my mate who runs a garage and asked him how to bleed the PAS system, he said to jack it up onto axle stands then start it up and hold the steering wheel in full lock on both sides. he said that there would be alot of noise (from pump)and bubbles (from reservoir) so i did that and after 5 mins the noise has virtually stopped. spoke to him and he said it was the air in the system which was causing the pump to make the sound.
so, it is now quiet again but i still haven't found the exact cause of the leak. i think i'm going to have to take the heatshields off from near the manifold and driveshaft cos i cant see anything with them in the way
will update again once i've done it

**NEW UPDATE**
stripped alot of the engine bay out/inner arch etc to find the exact source of the leak.
i now know, it is coming from a broken seal inside the drivers side steering rack boot. the seal has gone causing the boot to fill up with fluid which has then split under pressure.
so it does need a complete new rack as the seals cannot be replaced or fixed seperately.
BUT, i dont mind, infact, it got me pumped up enough-that i want to fix it.
so, i've sorted out a complete PAS steering rack from a 1997 a4 1.8t, it'll arrive wednesday and i cant wait to fit it. its going to be difficult to do without taking the engine out but i'll manage.
i'll update the thread with pitures when it comes
cheers
