RE: 1.8 or 3.0?
This topic has been covered more times than I care to think about. Rock out the search button on top. You'll get more info on this debate than anywhere else.
-Basic cause it's very late and yea. 1.8= more mods, can be made faster. 3.0 is said to be more reliable (no turbo to b!tch later on). But much less modable.
Do the search, youll get a lot out of it.

RE: 1.8 or 3.0?
i may be mistaken being as when i researched a similar topic, i was researching 98s instead of a 2002 or 2003, but everything for the bigger engines is much more pricey. But also keep in mind that the 3.0 is much heavier than the 1.8(and a lil more gas efficent)
For example.
my bf has a 98 2.8 quattro and i have a 1.8t nonquattro. For him to even put on an exhaust is ridiculous at every shop we went to.
Also we noticed that there isnt nearly as many options for the larger version than the smaller already turbo'ed version.
My car is just about stock, it has a larger, more efficent audi turbo and a cold air intake and some other goodies. His car is completely stock. he usually can git me off the line for a second since i have a BIG *** lag going for me, then i usually pull ahead until we git to like 70 or so and he just flys right by me. If he'd save up the money and spent the time on turbo'ing his car, it'd definately spank me from every which way no matter what i did.
If i wouldnt of found such a great deal on my current audi, i might have opt'ed for a bigger engine. a4's are just so damn slow.
